Main Dishes and Casseroles

Meatloaf

2 beaten eggs
1 8 ounce can tomato sauce
1 cup crushed soda crackers
1 tsp. salt
2 tsp. Worcestershire Sauce
1 1/2 lbs. ground beef
Mix well and put in loaf pan, spread top with ketchup.
Bake 350 degrees for 1 hour and 15 min.

Beef Roast

Sprinkle a beef roast with 1/2 pkg. (or more) dried onion soup.
Spread a can of cream of chicken soup on top of roast.
Cover tightly and bake in 250 degree oven for 3 or 4 hours
according to the size of the roast. This makes delicious gravy.
This can also be used on a frozen roast without thawing, just allow
a little more time to bake.

Salmon Patties

2 cups salmon (15 oz. can)
1 egg
liquid from salmon plus milk to make 3/4 cup liquid
1 1/2 cups coarse saltine cracker crumbs
1 Tbsp. lemon juice
1 tsp. onion (optional)
1/8 tsp. salt and pepper
Combine all ingredients and shape into patties. Brown on both sides
in 1/4 inch hot oil (this only takes a few minutes). Drain on paper towels
before serving.

Pheasant

Cut pheasant into serving size pieces. Mix 1 egg and 1/2 cup milk in bowl.
In separate bowl mix 1 cup flour with 1 1/2 tsp. salt and 1/8 tsp. pepper. Dip pheasant
in egg mixture and then in flour and brown in hot oil in frying pan
on both sides. Arrange pheasant in roaster. Mix 1 can cream of chicken soup
with 1/2 can water and pour over meat. Bake covered at 300 for 2 hours.

Barbequed Spareribs

4 lbs. spare ribs
1 cup water
1 cup catsup
2 Tbsp. vinegar
2 Tbsp. lemon juice
2 Tbsp. Worcestershire Sauce
2 Tbsp. brown sugar
1 tsp. dry mustard
1 tsp. salt
1/4 tsp. pepper
Brown ribs in a little shortening. Mix next 9 ingredients in sauce pan and simmer
20 minutes while browning ribs. Place ribs in roaster and pour sauce over
the ribs and bake at 350 degrees for at least 1 1/2 hours.

Tuna Casserole

1 (7.5 oz.) pkg Kraft Macaroni and Cheese, prepared
1 (7 oz.) can of tuna, drained
1 can condensed cream of mushroom soup
1/2 cup milk
1 tsp. lemon juice
Prepare dinner, add tuna, soup, milk and lemon juice. Pour into
a 1 1/2 qt. casserole dish. Top with crushed potato chips.
Bake at 350 degrees for 30 minutes.

Circus Beans

3 1 lb. cans or 2 larger size cans of Pork and Beans
1 1/2 cups brown sugar
1/4 cup vinegar
1 can tomato soup
2 lbs. hamburger
2 Tbsp. diced onion(optional)
Brown hamburger just until the red color disappears.
Add rest of ingredients and mix well. Bake in an uncovered casserole
dish for 45 minutes at 350 degrees.

Easy Goulash

Brown 1 lb. hamburger, adding salt and pepper and onions, if desired
Drain off grease.
Add: 1- 8 oz. can tomato sauce
1/2 can ketchup
1/2 can water
Simmer on low, meanwhile cook 8 oz. pkg. macaroni according to
directions. When done, drain, and add to hamburger mixture, Serve.

Tater Tot Casserole

Brown 1 or 1 1/2 lbs. hamburger with pepper and onion salt.
Drain off grease and layer in casserole dish.
Next layer 8 oz. can green beans, one can cream of chicken soup and
then cover with layer of frozen Tater Tots. Bake at 350 degrees uncovered
until Tater Tots are brown or at least 1 hour. You can use more green
beans if desired.

Creamed Chicken or Turkey

Blend 1/4 cup oleo or chicken fat with 3 Tablespoons flour in electric
skillet. Blend in 1 cup chicken broth and 1 cup milk stirring constantly
over low heat. Add 1 tsp salt (or to taste) and 2 cups diced cooked chicken or turkey.
You may also add chopped pimento if desired. Heat through and serve on biscuits.

Jodi's Lasagna

1 12 oz. carton cottage cheese
2 c. mozzarella cheese, shredded
(you need 4 cups shredded cheese total for recipe)
2 eggs
1/3 cup chopped parsley
1 tsp. onion powder
1/2 tsp. dried basil leaves
1/8 tsp. pepper
Mix above ingredients in large bowl until blended
1 32 oz. jar spaghetti sauce like Ragu
1 lb. ground beef, browned
Combine spaghetti sauce and browned ground beef
9 uncooked lasagna noodles
In 12 x 8 x 2 (or similar size) rectangular pan or dish spread a layer
of meat sauce, then lay 3 uncooked noodles over that and then spread
with 1/2 of cottage cheese mixture and then another layer of meat sauce.
Repeat layers and end with only the meat sauce on the very top and then top with
2 cups of shredded mozzarella cheese. Pour 1/2 cup water around edge of
of casserole. Cover tightly with aluminum foil and bake at 375 degrees
for 45 minutes, then uncover and bake 15 minutes more.
Let stand for 10 minutes before serving.

Hamburger Casserole

Season 1 or 1 1/2 lb. ground beef with salt and pepper and shape into
walnut size balls.
Line bottom of a casserole dish with meatballs (in one layer).
Then slice a thin layer of sliced carrots over meat, then 2 layers of
sliced potatoes. Pour a can of cream of chicken soup over meat and
vegetables and bake covered for 1 hr. and 45 min. at 325 degrees.

Celery Stuffing

9 cups dry bread crumbs or 1 bag of purchased unseasoned bread crumbs
1/2 cup diced onion
1 cup finely chopped celery
2/3 cup margarine
1 tsp. salt
1/4 tsp. pepper
1 1/2 tsp. sage
1/2 tsp. poultry seasoning
2 eggs, slightly beaten
1 1/3 cup milk
3 or 4 cups turkey broth, you can use chicken boullion dissolved.
(1 tsp. boullion to 1 cup of boiling water)
Brown onion and celery in margarine, add to crumbs and seasonings. Add
eggs, milk and broth (add broth gradually until moist). Mix well and
bake for 1 1/4 hours at 350 degrees or 1 1/2 hours at 325 degrees in
covered roaster. Stir several times. (Line roaster with foil for
easier clean-up). You can also stuff the chicken or turkey.

Swiss Steak

Cut tenderized round steak in serving size pieces and dip in seasoned
flour (salt and pepper). Brown on both sides in about 1/4 inch hot
oil. Arrange in roaster. Mix 1 can of cream of chicken and 3/4 can
of water and pour over the meat. Bake at 300 degrees for 2 hours.
